This cocktail is a perfect companion to a garden party, backyard barbeque, wedding, or just a little somethin’ somethin’ to sip on as we start turning the corner toward spring and summer. The vanilla syrup plays up the slightly oaky notes of the reposado tequila and the vegetal hints of the tequila balance out with the sweetness found in fresh pineapple juice. In case you were wondering, vanilla syrup is basically simple syrup with vanilla in it. Obviously there is more to it than that, but those are the basic ingredients. Vanilla beans can be expensive, but the good news is that the syrup will last you at least a month if kept properly refrigerated. The vanilla, pineapple, lime combo can be found in a lot of tiki and tropical cocktails and for good reason. It’s freakin’ delicious. The idea to use tequila instead of something like rum (which would also work) adds a degree of complexity that will please even the most discerning tippler.

1.5 oz. Reposado Tequila
1 oz. Pineapple Juice
.5 oz. Lime Juice
.5 oz. Vanilla Syrup

The production of this drink is pretty straightforward. Add all your ingredients in your shaker; give it the ol’ what-for, and strain over crushed ice. If you’re using fresh pineapple juice (and we really think you should), we recommend using secondary strain (or ‘fine strain’…same diff.). Don’t be alarmed that it comes out pretty frothy- that’s the pineapple juice. It does that. The foamy mouth-feel is actually quite pleasant, and if it were us, we’d be consuming it immediately, if not sooner.
