Today’s dose of delicious comes from contributor Brian Prugalidad (@hoyboss instagram) of Polite Provisions and Bankers Hill Bar and Restaurant. The Purple Pisco People Eater is a bit of a riff off the tried and true classic Pisco Sour, but with the added elegance of the lavender liquor. The smart move here was the substitution of lemon juice for the traditional lime. The front-end tartness of lemon versus the more mellow and lingering lime adds just enough backbone to balance out the sweet combo from the simple syrup and lavender liquor. The use of peach bitters gives this cocktail a delicate complexity that it would otherwise lack. And really, that’s what life is all about… balance and complexity. A nice metaphor for existence swaddled neatly by egg white froth and ensconced in a glass. Yeah, ensconced. Look it up.
Purple Pisco People Eater
1.5 oz Encanto Pisco
.75 oz Drinks Come True Lavender liqueur
.5 oz Lemon Juice
.25 oz Simply Syrup
2 dashes Peach Bitters
So for this drink we’re going to employ what’s called a “dry shake”. Add all your ingredients into your shaker tin, but do NOT add ice. Now, shake the heck out of it for a solid 20-30 seconds. Make sure your seal is good and tight, as you are creating a foam, and it wants to expand. Ok, once that’s finished, add your ice and re-shake for another 20 seconds or so. Strain out into your glass of choice- something like a double rocks glass. Serve up! Egg white drinks don’t typically get ice. Cheers!
